Unte um recipiente de vidro com um pouco de óleo.&lt;br /&gt;Aqueça o azeite em uma frigideira em fogo médio e refogue as cebolas e o espinafre com um pouco de sal até as cebolas ficarem douradas e o espinafre murchar. Retire da frigideira e escorra o líquido que houver sobrado. Coloque o espinafre e cebola em um prato enquanto prepara o resto da receita.&lt;br /&gt;Em um recipiente grande, bata os ovos, o queijo ralado, uma pitada de sal e a pimenta do reino. Depois de batido, adicione a esse recipiente os espinafres e cebolas e bata mais até ficar tudo bem misturado. Então coloque tudo na vasilha de vidro untada com óleo.&lt;br /&gt;Coloque a vasilha do quiche dentro do forno e deixe assar por aproximadamente 30 minutos à temperatura de 180 graus (dependendo do seu forno, pode demorar um pouco mais ou um pouco menos), olhando de vez em quando para ver se não queimou. Retire quando o queijo da superfície estiver dourado e gratinado. Assim que ferver, junte uma colher (sopa) de sal e a couve-flor. Cozinhe a couve-flor até que esteja macia, mas inteira (aproximadamente 10 minutos). Enquanto a couve-flor cozinha, aqueça o forno a 200ºC (quente) e unte um refratário com a margarina. Em uma tigela, misture o requeijão ou  catupiry, o parmesão, o sal e a noz-moscada, batendo com um batedor de arame até encorpar. Escorra a couve-flor e coloque-a no refratário. Espalhe os cubinhos de margarina sobre a couve-flor e regue com o creme. Coloque em uma panela (espagueteira)com um pouco de água e cozinhe por mais ou menos 10 minutos.  Escorra e reserve. Em uma panela tipo wok comece fritando com um pouco de óleo uma cebola, acrescente após alguns minutos o pimentão e depois a linguicinha cortada em rodelas. Mexa sempre para não queimar. Acrescente o repolho previamente cozido, misture, acerte o sal, tempere com pimenta-do-reinoa a gosto (opcional) e deixe refogando até que seque completamente (o repolho não deve soltar mais líquido).Por último, acrescente o molho de tomates pelados,  misture e refogue por mais 20 minutos ou um pouco mais (até quase secar o molho). Coloque a  carne,temperando-a com sal e pimenta à gosto e deixe cozinhando até secar completamente e começar a fritar.  Acrescente os cogumelos e as 2 latas de tomates pelado. Deixe no fogo  por mais um tempo, até que o molho fique bem apurado. Coloque a carne moída,temperando-a com sal e pimenta à gosto e deixe cozinhando até secar completamente e começar a fritar. Mexa bem, para que o guisado fique solto. Acrescente os cogumelos e as 2 latas de tomates pelado. Deixe no fogo  por mais um tempo, até que o molho fique bem apurado. Dica: deixe o molho bem espesso, não pode ficar aguado. Reserve.&lt;br /&gt;&lt;br /&gt;Preparo das beringelas: lave-as em água corrente, seque e corte no sentido  mais longo em fatias de mais ou menos  0,5 cm. Grelhe rapidamente  as fatias de beringela em um frigideira antiaderente, com um fio de azeite de oliva. Não precisa temperar.&lt;br /&gt;&lt;br /&gt;Montagem do prato: em um refratário, levemente untado com azeite de oliva, monte camadas na seguinte ordem: beringela, molho, fatias de presunto e por cima fatias de queijo. A montagem pode levar de 3 a 4 camadas, dependendo do tamanho do refratário.
